How to make soft coffee biscuits?
You´ll need:
• 80 ml coffee at room temperature
• 390 g 00 flour
• 140 g granulated sugar
• 130 g softened butter
• 2 medium egg yolks
• 8 g baking powder
• Icing sugar
To make the biscuits, cream the butter and sugar to obtain a smooth, even mixture. Now add the egg yolks, baking powder and flour, and mix well. Finally, add the coffee. When the dough is ready, make small balls and place on greaseproof paper. Bake the biscuits for 15 minutes at 160°C in a static oven.

Coffee and cocoa biscuits
Another recipe that´s perfect for anyone who loves the combination of chocolate and coffee: these coffee and cocoa biscuits are simple but delicious! Let´s find out how to make them.
For this recipe, choose high-quality ground coffee for moka or espresso, so your coffee biscuits will be truly delicious!
To make coffee and cocoa biscuits, you´ll need:
• 250 g flour
• 100 g cocoa powder
• 150 ml coffee
• 3 egg yolks
• 120 g icing sugar
• a pinch of salt
• 150 g butter
To make the coffee and cocoa biscuits, cream the butter and icing sugar, adding a pinch of salt and the sieved flour. Then add the cocoa powder and coffee and combine to obtain a smooth mixture.
Refrigerate the mixture for at least two or three hours before using. Place the biscuits on a baking tray and cook for 10 minutes at 180°C.
Coffee and almond biscuits
A combination you must try, and the base of a famous drink, "Leccese coffee": almonds and coffee. To make this recipe, we recommend choosing high-quality coffee pods, which will make the preparation of these delicious biscuits quicker.
To make the coffee and almond biscuits, you´ll need:
• 100 g ground almonds
• 100 g 00 flour
• 100 ml coffee
• 3 egg yolks
• 50 ml almond milk
• 150 g butter
• 150 g icing sugar
• a pinch of salt
Start by thoroughly mixing the ground almonds and icing sugar with the butter. Then add the egg yolks gradually, mixing well.
Now add the flour and a pinch of salt. Finally, pour in the coffee and almond milk. When the mixture is ready, make small balls and slightly flatten them, then place on greaseproof paper and bake at 180°C in a static oven for about 30 minutes.

Butter-free coffee biscuits
If you want a lighter recipe, you can make these simple coffee biscuits without butter. To make these biscuits without butter or milk (if you´re intolerant to lactose), you´ll need the following ingredients:
• 200 g 00 flour
• 100 ml sunflower oil
• 50 ml coffee
• 2 egg yolks
• 100 g icing sugar
• 3 g baking powder
Combine the sunflower oil with the icing sugar and egg yolks. Mix well, then add the sieved flour little by little. Finally add the baking powder and the coffee.
When the mixture is smooth and even, roll it out and use a round cutter to make the biscuits. When the biscuits are ready, place them on a lined baking tray and bake for about 15 minutes at 160°C.
Vegan coffee biscuits
To make vegan coffee biscuits, we can´t use animal-based ingredients, so no butter or eggs. But we can still make delicious biscuits!
To make vegan coffee biscuits, you´ll need:
• 180 g 00 flour
• 80 g granulated sugar
• 60 ml sunflower oil
• 20 g cocoa powder
• 1 small cup of coffee
• a pinch cream of tartar
• a pinch of salt
Combine the sunflower oil with the sugar and cocoa powder. Then add the flour and the coffee.
Mix well and add the cream of tartar and a pinch of salt. The mixture should be soft but easy to handle. Roll out the dough, cut into biscuits and bake for 15 minutes at 160°C.

How to store coffee biscuits
Coffee biscuits should be stored in a metal biscuit tin with a tight-fitting lid. Another option is to use a plastic container with an airtight lid.
