We include high-quality Chun Mee green tea in each of these blends both silvery tips and leaf fannings. This delicate green tea is harvested in the early spring and has a sweeter, nuttier flavour than other green teas. Translating as precious eyebrows, its name is inspired by the curled appearance of the dried tea leaves. The addition of Chun Mee brings a rounded character to our green tea, which creates a lovely backdrop for the flavoured blends - enjoy it in its purest form in our Green Tea Pure. The leaves are fixed by pan-frying in large woks, a traditional technique that seals in the flavours and natural antioxidants of the tea plant. As opposed to steaming and air-drying the methods used for most Japanese tea production  pan-frying imparts a delicate toasted note which makes this style of Chinese tea uniquely satisfying.
