This coffee comes from the state of Kerala, on the south coast of India, and is the best quality of monsoon coffee. It is so called because after harvesting, the green beans are exposed to the monsoon winds for several weeks during the rainy season. This process reduces acidity and increases sweetness, giving it a straw-yellow colour. The roasting together with the processing method gives the coffee a unique flavour with sweet and spicy undertones.
The preservation of taste and aroma is ensured by packaging in an inert protective atmosphere.
