A festive menu all about coffee

STARTER: Coffee potato chips

Ingredients for 4 people

400 g potatoes
1 L peanut oil
10 g Caffè Corsini ground coffee powder Compagnia dell'Arabica Brasil Santos
10 g Maldon salt

Procedure

Wash the potatoes, cut them into thin slices and rinse them in cold water several times to remove the starch. Then drain them and dry them thoroughly with a tea towel. Heat the oil in a large frying pan and when it is ready, start frying the chips a little at a time.

After draining and patting them dry with kitchen paper, sprinkle them with Brasil Santos ground coffee powder, which adds an exotic touch to the dish with its delicate aroma of dried fruit and cocoa. Finally, sprinkle with Maldon salt flakes and serve hot.

FIRST COURSE: Risotto with fontina cheese, walnuts, honey and coffee.

Ingredients for 4 people

260 g Carnaroli rice
80 g fontina cheese
2 shallots
Half a glass of still white wine
10 walnuts
Vegetable stock, to taste
Extra virgin olive oil, to taste
Salt, to taste
Powder of Caffè Corsini espresso coffee beans, to taste
Acacia honey, to taste

Procedure

Shell the walnuts, chop them, toast them in a pan without oil and set aside. Clean and chop the shallots and brown them in a risotto pan with a drizzle of oil.

Add the rice and toast it, pour in the wine and let it evaporate, continue cooking, adding the stock little by little until cooked. Turn off the heat, add a handful of chopped walnuts and mix well, then stir in the fontina cheese.

Divide the risotto between the plates, sprinkle the remaining chopped walnuts over each one, drizzle with a little honey and dust with freshly ground full-bodied Espresso coffee beans, ideal for giving the dish an even more harmonious flavour. Serve immediately, hot and fragrant.

SECOND COURSE: Oven-baked pork tenderloin with coffee.

Ingredients for 4 people

1 pork fillet
2 tablespoons of Caffè Corsini Arabica ground coffee powder
2 tablespoons of sugar
1 teaspoon of juniper berries
2 yellow peppers
Extra virgin olive oil, to taste
Salt and pepper, to taste
Blackberries, blueberries and raspberries, to taste

Procedure

Wash the peppers and bake them whole in the oven at 200°C for about 25 minutes. After removing them from the oven, leave them to cool for a few minutes in a bag, then peel them and remove the seeds.

Chop the juniper berries, mix them well with the sugar and Arabica coffee powder, whose softness and fragrance add elegance to the flavour. Clean and trim the fillet, rub it with the mixture, cook in the oven at 180°C for 20 minutes (it should be pink inside) and, after removing from the oven, slice it into 4 portions. Blend the peppers with oil, salt and pepper.

Assemble the dishes: first pour the pepper sauce onto the bottom, then place 2 portions of fillet on each plate, garnish with berries and serve immediately.

SIDE DISH: Coffee-roasted carrots.

Ingredients for 4 people

8 carrots
2 tablespoons of Corsini American Coffee ground filter coffee
8 tablespoons of extra virgin olive oil
Salt, to taste
Caffè Corsini ground coffee Compagnia dell'Arabica Aromatico e Cremoso, to taste
Thyme leaves, to taste

Procedure

Clean the carrots, cut them into sticks and marinate them for a few minutes in a mixture of oil, salt and American coffee, which, with its light notes of dried fruit and spices, enriches the flavour without overpowering it.

When they are well seasoned, start cooking: line a baking dish with baking paper, arrange the carrots on top and bake in the oven at 200°C for about 20 minutes, turning them halfway through cooking.

After removing them from the oven, serve them on a serving dish, sprinkle with coffee powder and garnish with thyme leaves. Tasty and crunchy, they are excellent hot, warm or even cold.

DESSERT: Delicious chocolate and coffee tartufi.

Ingredients for 6 people

100 g fresh liquid cream
1 tablespoon sugar
200 g dark chocolate
1 cup Caffè Corsini ground espresso coffee "Qualità Oro"
2 teaspoons Caffè Corsini ground coffee powder "Qualità Oro"
Unsweetened cocoa powder, to taste

Procedure

Roughly chop the chocolate with a knife. Heat the single cream in a small saucepan, pour in the espresso coffee and the Qualita Oro ground coffee powder, with its aromatic and smooth flavour, perfect for making the preparation even more delicious.

Then add the chopped chocolate and mix well. When everything has melted and formed a smooth cream, pour into a bowl and leave to cool, then place in the refrigerator for at least 4 or 5 hours and then in the freezer for another 30 minutes.

At this point, the cream will be solid and you can quickly form the tartufi one by one with your hands. Pour the cocoa powder into a saucer, roll the tartufi in it and turn them over so that they are completely covered.

Finally, place them in paper cases and store them in the refrigerator until ready to serve.
