Our recipe for “breaking the ice”

We have created a cocktail that is a tribute to summer sunsets and the heady scents of blooming gardens. The "Sunset Coffee Bloom" is an elegant and refreshing drink, which, thanks to the unique taste of Caffè Corsini, acquires depth and character, with a touch of softness.

Ingredients

  • 30 ml of Caffè Corsini Blend 100% Arabica, brewed and chilled
  • 45 ml of Vermouth Rosso
  • 15 ml of orange liqueur (e.g. Triple Sec or Cointreau)
  • Neutral tonic water (or Ginger Ale for a spicier note)
  • an orange peel

 

Preparation

Fill a tall tumbler or large Gin Tonic glass with ice and leave it to cool while you prepare the rest.

In a shaker filled with ice, pour the cold coffee, Red Vermouth and orange liqueur. Do not add the tonic water in the shaker!

Close and shake vigorously for about 15 seconds. The shaker should become very cold to the touch. This step is essential to cool, dilute slightly and create foam.

Empty the glass of cooling ice and fill it with new, fresh ice.
Strain the contents of the shaker into the glass. You will notice that a light, inviting foam has formed on the surface.

Top with tonic water (or Ginger Ale), pouring it gently around the rim of the glass so as not to “break” the foam.

Garnish with an orange peel, after sprinkling its essential oils over the drink.

EXTRA TIP: for a real “Sour” cocktail foam

If you want an even thicker, more stable and professional-looking foam, you can add an emulsifying ingredient to the shaker, just like in real sour cocktails.

Add to the shaker (along with coffee, vermouth and liqueur) about 15 ml of pasteurised egg white or, for a vegan alternative, 15 ml of aquafaba (the water from tinned chickpeas, a great tasteless vegetable emulsifier).

For best results, make a “dry shake”: first shake all ingredients (except tonic) without ice for 10 seconds to froth, then add ice and shake again to cool. The rest of the procedure remains identical.

A velvety cream that enhances the contrast between the savouriness of the cheese and the bitterness of the coffee.

Method: Process 200g goat cheese with a tablespoon of fresh cream to a mousse. Add half a teaspoon of coffee powder (the same 100% Arabica blend), a pinch of salt and pepper. Distribute the mousse in small glasses and complete with toasted hazelnut kernels and a drizzle of EVO oil.

 

Seared prawns in a coffee and citrus marinade

An explosion of flavour that echoes the citrus notes of the cocktail.

Procedure: Prepare a classic chicken liver pate. At the end of cooking, with the heat off, stir in a knob of butter and a teaspoon of ristretto coffee (or a pinch of coffee powder). The heat will release the aroma without making it bitter. Serve the pate warm on slices of toasted Tuscan bread.
