The Thermomix® is the ultimate food processor and is ideal for those who are new to cooking or have little time available. It also boasts a large number of fans of all ages and is often found even in restaurant kitchens.

It is versatile and easy to use for a variety of dishes, sometimes offering superior quality in certain steps.

Preparing coffee recipes with the Thermomix® is not difficult: just familiarise yourself with this small appliance and you're good to go. The result is worth it, both in everyday life, to bring something different to the table, and when you have guests, even at the last minute.

Soft coffee cake recipe

This recipe for coffee cake made with a Thermomix® requires two types of coffee: a classic coffee made with a moka pot and instant coffee. For a dessert serving four people, you will need two cups of the former and about three tablespoons of the latter.

The other ingredients, again for 4 people, are:

● potato starch, flour (preferably type 1) and butter, all in the same proportions (100 g each);
● one sachet of baking powder;
● 150 g of brown sugar;
● 30 g of sunflower oil;
● 3 eggs;
● icing sugar/cocoa powder to taste (optional).

Here is the procedure:

  1. Prepare the coffee with the moka pot and leave to cool. Turn on the oven so that it is hot;
    2. Put the sugar, half of the coffee made with the moka pot and the egg yolks in the Thermomix jug and mix on speed 3 for 6 minutes. Set the egg yolks aside;
    3. Meanwhile, melt the butter in a bain-marie;
    4. Put the melted butter, flour, starch and baking powder into the jug. Mix for about 1 minute at speed 4.
    5. Add the instant coffee and mix for 1 minute at speed 4.
    6. Set the mixture aside and beat the egg whites until stiff, setting the Thermomix® for 7 minutes at speed 3.
    7. Mix the beaten egg whites and the mixture together using a spatula.
    8. Grease a cake tin with butter and flour or line it with baking paper and pour in the mixture.
    9. Bake for at least 35 minutes at 170°C. To check if the cake is ready, insert a toothpick into the centre;
    10. Serve the cake when it has cooled, sprinkled with cocoa powder or icing sugar.

How to make coffee cheesecake with the Thermomix®

The second dessert you can prepare, among the best recipes for coffee with Thermomix®, is a simple and tasty cheesecake, perfect as a dessert or even a birthday cake. It is inspired by the iconic “coppa del nonno” and can be served in individual portions.

These are the ingredients for 4 people:
● 200 g of crumbly chocolate biscuits;
● 100 g butter;
● 1 sheet of gelatine;
● 300 g mascarpone or creamy spreadable cheese;
● about 100 g coffee (consider that a cup of espresso is about 10 g);
● 100 g sugar; alternatively, Dulcita-type cane sugar is fine;
● 300 g fresh cream;
● to decorate: coffee beans/chocolate powder/coconut flakes.

Here are the steps to follow:

  1. Finely crush the biscuits by placing them in the Bimby® jug and running the machine for about 20 seconds at speed 6.
    2. Meanwhile, soften the butter and add it to the biscuits to create a smooth mixture. Pour this into a cake tin lined with baking paper or greased with butter and flour.
    3. Level the mixture with a spatula and leave in the fridge for at least half an hour.
    4. Soften the gelatine in water (this will take about 10 minutes).
    5. Mix the following ingredients on speed 3, one at a time: cream, mascarpone and coffee.
    6. Add the mixture to the biscuits and level with the spatula. Leave to rest in the fridge for at least 4 hours. Garnish as desired.

Making coffee ice cream at home

To prepare this special ice cream, you need an equally special drink, such as one from the Caffè Corsini Aroma range, with its rounded, decisive and balanced flavour, with prominent notes of bitter cocoa.

The procedure is simple: just freeze the coffee in freezer bags, mix it with icing sugar for about 10 seconds at speed 7, until you obtain a smooth cream.

For extra creaminess, simply mix in some liquid cream, which should also be frozen, using the Thermomix® at speed 7 for about 20 seconds.
At this point, just be sure to stir several times with a spatula to prevent ice crystals from forming.

Coffee mousse: a creamy treat

Coffee spumone is a creamy delicacy to be savoured and can be made very easily with a Thermomix.

The best thing to do is to prepare whole milk cubes in advance (250 g for 4 people), using special freezer containers, together with cold coffee made with a moka pot or instant coffee (1 cup per person).

Then blend together with caster sugar (50 g), setting the Thermomix to high speed, at least 7 for about 20-30 seconds or until you obtain a frothy mixture. At this point, all you have to do is garnish as you like: with coffee beans or cocoa powder.

Coffee jam: also perfect as a gift

Coffee jam is one of the simplest and most delicious recipes to make with the Thermomix®, perfect as a gift for others or yourself. It is very easy to make. Here are the ingredients for a 150 g jar:
● 230 g cream (whipping cream);
● 150 g coffee;
● 80 g sugar, or 50 g if you prefer a more bitter taste.

The procedure is as follows. Once the coffee has been prepared, it must be frozen using moulds. The cubes must then be chopped together with the other ingredients until a cream is obtained, using the Thermomix® at speed 7 for about 30 seconds.

For greater creaminess, set the Thermomix® to speed 4 for about 3 minutes and you're done!
